Whatever happened to gęsina?

Roast goose, półgęsek wędzony, czernina z gęsi and others were once
Polish delicacies. Poland next to Hungary is Europe's biggest goose producers, but I am told goose is almost impossible to find in Poland's supermarkets today. All the goose is reportedly exported to Germany. Have Poles lost their taste for it? It is a rich, delicious reddish meat - something like a cross between beef and turkey, but even better.

you can buy Polnische Gaense in most delicatessen in Germany before Christmas

as far as I can remember it has a particular smell that not all people like and I am not sure the smell vanishes with prolonged cooking

Bomi (at Klif Centre in Warsaw) have it, Piotr and Paweł sometimes too. It's a bit out of favour everywhere (not surprising if you have an ordinary size 50cm oven, not to mention the huge amount of fat and today's smaller families).

Tastes lovely though!
