I hope nobody minds me jumping in, newbie that I am...
I'm no expert (I'm not even Polish!), but I have had success with some Polish-tasting casseroles. I know they are not authentic, but our two favorites are
Pierogy casserole (alternate layers of mashed potato, lasagna noodles, and cheese, plus any other fillings you like), and
Stuffed Cabbage Casserole (shred a head of cabbage and an onion, mix it with 1 lb of raw ground beef, stir in a can of tomato soup (or sauce) and a can of mushroom soup, then transfer mixture to a 9x13 pan and bake the whole thing, covered at first, then uncovering towards the end, adding tomato sauce/water if it dries out.)
Again, I know they are not the "real thing", but they give you the flavor and "comfort food" feeling, and they are easy for busy nights.
Try bigos. It basically cooks itself : en.wikibooks.org/wiki/Cookbook:Bigos, although it's not for those who hold their breath while waiting for dinner.
Note on mushrooms: best if you don;t use the white things they sell in regular stores. Go to a Polish store and ask for mushrooms for bigos, ideally "prawdziwki" and they will be dried.
