ANYBODY MAKE HOME-MADE KIEŁBASA?

Just wondering if anyone on PF makes their own Polish sausage. If so, would you care to share your recipes and techniques?

My dad does. It is really quite impressive how he wakes up early in the morning, kills the pig and then prepares the meat for 2 days.

Here we don't kill the pig---We got to the store and buy the front or rear shank of the pig.Like,it's real cheap and not as messy.We only make enough for a few weeks.I mean,How much kielbasa can you eat at one time ????I find that too much of a good thing at one one time turns you off it, even though it's really good !!!!

I don't believe anyone here makes kiełbasa. To make the genuine top quality thing you need a smokehouse and special kinds of wood. I can understand your idea though, the "Polish" sausage they sell in the States is disgusting. companies which call it "Polish" should be sued.

I just tried making some vegetarian burgers from a new recipe and they were a disaster grrrr..........wonder whther it is worth all the effort of following your recipe only for it <maybe> to end in disaster ? Why on earth try to make your own when many shops have perfectly good kielbasa anyway ? :)

Lir: vegetarian burgers Sorry LIR, that was destined for failure from the start. Nothing like good old fashioned beef in a hamburger! Lir: Why on earth try to make your own when many shops have perfectly good kielbasa anyway ? Some people aren't so fortunate as to live close to a Polish Deli. When you need your fix, you need your fix!

Yes, a vegetarian burger is a perfext oxymoron. If Polonius lives in the States I can imagine why he misses the real kiełbasa. Honestly, I can't wait to hear from Polonius how dramatically he failed in making kiełbasa, but as they say, it is not the goal itself but the effort you pur into accomplishment of the goal that gives you satisfaction. And he doesn't have to butcher a pig, what a relief. I keep making szarlotkas (Polish apple pies), which are consistently hopeless, but I never give up. Tonight I am making apple pie from pears. I wonder if anyone came up with this idea before me.

what can I say? it is just like apple pie, but there are no apples. Same as veggie burger :)

I wonder if anyone came up with this idea before me. Well, we are interested in food here, too. I am sure a szarlotka substituting apples for pears would be good. Let us know how it turns out! Oh, and be sure to take lots of pictures.

My mom makes kielbasa. she only uses pork,salt,pepper, and garlic for seasoning. Adds some water to the meat insterd of ice cubes. When we lived in Poland there was no ice or electricity in our village. Hope this helps.

No, I never made my own kiełbasa, but my late Polish grandmother in Hamtramck used to do. It was the hand-cut kind and was it ever good! I also had an uncle that did. But there are Pol-Ams all over the States at present who make their own sausage, usually around Christmas and Easter. BTW my Hamtramck babcia used to bake pear pies. There was this huge pear tree in her back garden that had gone wild and produced brick-hard pears. But they were great in pies. Apple & pear (50-50 or so) ones are also good. A dash of nutmeg instead of cinnamon is recommended.

Hi Molly Malone, Yours is the exact recipe we use here for fresh kielbasa....and it is terrific!! Thanks for the smoked version recipe. We have a smoker we have never used, but intend to. My husband's father is from Poland and he is the one who taught my husband to make the kielbasa. It's a very easy recipe. We make it around Christmas and Easter time. We live in Michigan, USA.
