Kolacz/Kolatz recipe needed

I am searching for a recipe for Kolats. It is made with mashed potatoes, cheddar cheese, sugar, eggs, and butter on top of a yeast crust. It is delicious, and it is often served with slices of ham on holidays. I was told it was a "poor" people's recipe from Poland.

I did google it, and it comes back a "sculpture cake" which is not what I am looking for. This is like a cheese pizza - a yeast crust, with a mixture of mashed potatoes, cheddar cheese, Velveeta, sugar, lots of eggs, lots of butter which is put through a food mill, and then put on the crust and baked until golden. I have a couple of recipes but am interested in others as well as the origin, since it is not in any Polish or regional cookbook I can find.

I am also looking for a cheese bread, not a cake. The bread is not sweet, I remenber it being very white with lots of holes. My grandmother had a woodburning stove and made a big round circle of bread piles in the center was a farmers cheese. How can I share the recipes that you have received.

This is my grandmother's recipe for koloc. I rember her making it around Easter time. As kids we called it Polish pizza. It makes a large quantity, you cann sice it and freeze some without any loss of quality.

This is the KOLOC recipe you asked for. Please remember that there is an accent

Mark, similar to the biblical sign for a fish, over the L.

KOLOC



2 cups warm milk

2/3 stick butter – melted. (add to milk when melted)

1 tbs. salt

2 tbs. sugar



Dissolve 1 package dry yeast in ¼ cup warm water

Add yeast mixture to milk. Beat in one egg. Add 7 to 8 (or more) cups flour gradually

To make a soft dough.

Knead Dough

Grease bowl & let dough rise until double in size

Shape into a ball.

Place on a floured pizza pan

Cover and let rise again.

When double in size, shape to pan, with a raised edge around the outside



CHEESE MIXTURE

3 pounds dry cottage cheese (substitute - farmers cheese)

½ lb butter

8 beaten eggs

2 tsp. salt

6 wooden spoons of flour

¾ cup raisins (more if desired)

Mix all together and spoon on top of dough



1 egg yolk, 3 tbs ½ & ½ , 2 tbs. flour

Mix with a wire whisk until the consistency of thin white sauce (add more ½ & ½ if necessary). Drizzle over top before placing in the oven.



Bake at 350 F. for 45 min. to 1 hour or till crust is a medium light brown.

Check out grandpastan.com for an insturction dvd. This is a Polish sweet bread with cheese on top. You can add rasins if you like. The best kolacz this side of Warsaw.

Long before the mutli-tiered wedding cake made the scene in Poland, there was the kołacz weselny, a round yeast-raised cake or bread usually with a sweet cheese filling in its central indentation.
