Since there are problems with souring homogenised or UHT milk to make basic pot cheese, I have heard of shop-bought buttermilk being usded for this purpose. Has anyone tried it? To 4 pints of buttermilk you add 1/2 a pint of commercial sour cream and let it clabber. Then heat gently until curds float up and strain throuhg cheesecloth. In Poland I have seen twaróg maślankowy in the shops. The taste is no different than ordinary sour-milk-based twaróg.
