Grammatical question:

Why dużo (an adverb)? Doesn't make sense in my head.

Why not, Weronika życzy ci dużego zdrowia (...)?

because she's not wishing him "big health", she's wishing him "a lot of (dużo) health" :-)

compare to: dużo makaronu (a lot of pasta), dużo wody (a lot of water) etc.

I may be completely muddled in my grammar terminology here, but "dużo" AFAIK is not an adverb.

I must admit, I always thought dużo was an adverb from the adjective duży. ;)

Fur sure it is. But this must be some special construction where dużo is used like a "semi-adjective", because this use of dużo is not like a normal adjective - it's not declined by gender or case. It's used like sth "between" an adverb and an adjective.
Let's check this. :)

agree that it is because she is wishing 'much health'.
there must be some uncountable aspect here. some less-specific-in-terms-of-amount, more-meaningful-in-terms-of-quality thing going on here. (forgive me - i am an instinctual learner now - and have no excuse to offer for that, given my education, except that it feels good)

Now I realized that this a rare situation where the adverb appears in a situation where an adjective should be expected.

So probably we can say it's something in-between an adjective and an adverb.
