Marszałek sejmu is speaker or chairman of (the lower house of ) Parliament
Marszałek Polski = Marshal of Poland (like Piłsudski)
Marszałek Polny = field marshal
What about Marzsałek Województwa, not to be confused with the wojewoda (voivod or provincial governor).

Similarly, why do Poland's TV voice-over people translate US marshal or federal marshal as szeryf?

What about Marzsałek Województwa

It is someone like a governor, however not elected directly but by sejmik województwa...

How should they ?

In america a sheriff is the chief of the county police dept, somewhat like komendant komendy powiatowej policji, in other words a local law-enforcement officer.
A federal marshall is a national law-enforcement official. Maybe marszałek federalny. It's all a question of convention.
Somebody starts something and others blindly follow. Such as the breakfast pancakes talked about in American films and regularly mistranslated in Poland as naleśniki. Believe me, 99 and 44/100% of all Americans DO NOT eat crêpes (thin pancakes) for breakfast, only the raised variety, also known as griddle cakes, wheat cakes and flapjacks in the US and racuchy or placki in Polish.

I'd call such person "Wojewódzki Komendant Policji" or something similar.
In Poland there are "Województwa" similar as the "States" in the US and we don't use "federalny" (federal as in the US) while addressing any government officials working for "wojewódzki" district.

A pancake is not a Polish "naleśnik", I agree . Our "naleśniki" are much much more delicious.
I'd compare the pankcakes to a Polish "bliny" or "racuchy" .

How about chairman or speaker of the provincial (or voivodship) assembly?

If voivodship assembly the structure and positions are:

In Sejmik Województwa - Przewodniczacy and Wiceprzewodniczący
In Zarząd Województwa (5 people)- Marszałek Wojewodztwa who's also called Przewodniczacy; Wiceprzewodniczacy and Członkowie

I thought (apparently erroneously) the marszałek województwa was the head of the sejmik (chairman, speaker). If not, that means an overbureaucratised provincial structure comprising not only the Urząd Wojewody but also the Urząd Marzsałkowski -- two spearate executive bodies. What are they in charge of? Do their duties overlap? Couldn't a province get by with only one of them?

He is not a head of sejmik. Marszałek (or Przewodniczący) is a head of second important "organization" called Zarząd Wojewodztwa and he is choosen by... Sejmik!

"that means an overbureaucratised... structure"
- of course but we can only talk about it.

It is essential to know that Urząd Wojewódzki is part of the central government administration, while Urząd Marszałkowski is part of a regional administration (samorząd). The competences of the two are separate, so you cannot say their duties overlap. Members of a sejmik are elected in regional elections.

The name "marszałek województwa" is misleading in my view. "Marszałek" in Poland was either a speaker of the House or the highest rank in the military. Never a head of an executive body of a regional parliament. In that sense he/she is a "prime minister" of a given voivodship.
