My dzia dziu was talking and he said something that started with matko and ended with something that sounded like yah-den-oh. I was wondering what that word was and how its spelled.

You're close, but its more like
Oh Maryjo Jedyna! or Matko święta....
translation: Oh Holy-Mary-Mother-of-God! An expression of bewilderment, just as for the mentality expression, 'Oh My God!'
A lot of Christian Catholic have an issue with such expression and believe you shouldn't make them based on their cultural preferences.
Even the "oh mother!" expression identifies with someone who is incapable to reason in sane manner with their mother.

dzia dziu is in Polish Dziadziu a soft and a very nice title for "dziadek" (grandpa) and your Grandpa said.... Matko Jedyna, which is a very (till now) popular and means "oh my the only/loved Mother"...for some people it works like "Oh , my Holy Mother"

No, its one word and probably the Grand dad would not know the word because it was probably said to him so badly pronounced that he would not have recognized the word. Unless someone knows Polish phonetic coding well such a word would be hard to speak.
