I need help translating something into polish.
" would you like to go out to dinner sometime next week?"
or something along those lines.

kiedyś w przyszłym tygodniu is certainly NOT a structure in Polish.
in this case, simply drop sometime = kiedyś.
that sounds Polish and it is the proper grammar structure
