If I work in information technology what would that be in Polish?

As in my job title, I think there is a word for that but I can't seem to find anything.

Take it easy, it's just harmless humor. To answer your question: IT = informatyka, IT worker = informatyk.

informatyka is computer science, informatics

IT is popular in Poland and used in Polish
but if you still want to translate it, pgtx was right - technologia informacyjna.

But IT is rarely used in job offers, they usually use specific position names like programmer, senior programmer, software developer, system administrator and such :)
