English slang has got numerous terms to describe inebriaton including:
pissed, soused, fried, cooked, stewed, ploughed, wasted, etc., etc.
What other ones are there in Polish slang besides: ubzdryńgolony, pod dobrą datą, wstawiony, zalany w psetkę, pijany na umór....?

quite popular, probably not one of the words you will use in public....:

najebany

Of course the categories are subjective.

very very drunk:
najebany (very generic, as you can use the words jebać/pierdolić = f*ck, for almost anything, in lack of other words, so it's not very innovative linguistically)
nawalony
narąbany
pijany jak bela
urżnięty w trupa

pić na umór (as the verb, I think the adjective version "pijany na umór" isn't used)

very drunk:
ubzdryngolony (I haven't heard the version with "ń")
zalany w pestkę
napruty (not very firm in our language, every generation invents new words/expressions, some of them remain for a long time, some disappear sooner)
w stanie upojenia alkoholowego (that's rather an official expression)

moderate:
nietrzeźwy (quite official, like inebrated, not sober)
na bani
pod wpływem (that's a mild term, short for "pod wpływem alkoholu" = under the influence of alcohol, maybe be used for drugs as well)

light drunk:
zawiany
na rauszu
podchmielony
wstawiony
pod dobrą datą
(a little archaic, rather soft expression, euphemistic, I could immagine an older auntie using it)

No! Only "najebany" means drunk.
zajebany is rare, don`t use it.
pojebany means kind of crazy

ze rżnięty?

Nope, this has completely different meaning.

nakurwiony

This also doesn`t mean drunk, rather furious (but should we wkurwiony)

napierdolony

Nope, we don`t use this word either.

I wasn't referring to the obvious najlepszy.

I just want the easiest, most reliable, most up-to-date term to describe the state one reaches after a couple of beers.... on an empty stomach.

pijany, or a bit more vulgar - najebany. they are the easiest and most common ones. Osioł, co Ty, jesteś najebany a na zewnątrz jeszcze widno! Ty alkoholiku...

JustysiaS:
pijany

I know this one! I like the feminine version. It almost sounds like piano. To me it does anyway.

esek:
podchmielony

I'm rehearsing this one right now. I could be absolutely wasted, but try to claim to be this one due to it being almost the only one I can pronounce.

Seanus:
one step short of

No it can't. JustysiaS and Saja pointed it already. We use "pojebany" to insult someone who is acting very crazy, or is just mental.

One more word for being very drunk - narżnięty.

Yeah :D
After I've had finished my last post, I was thinking about adding something about hangover. So there you go:

hangover - kac (pronounced almost as "Catz", the "a" is just a bit more Polish)

Mam kaca. Dzisiaj miałem kaca-giganta. On jest strasznie skacowany.

what about lekko zrobiony?

It is very accurate, but more slang than podchmielony, or lekko podpity.

I think when a Pole is little buzzed or tipsy, he'd say he's just after one or two beers/shots - po jednym piwie/piwku/kieliszku, po małej wódce.

No. It means the same as pojebany (crazy, mental).
