what is the best way to skin and cook a rabbit?

DO Polish people like eating rabbits and if so how do you cook them?

One of my favourite rabbit recipes

Rabbit and Lemon Tagine

Recipe :
Peel and chop onions, crush garlic and chop herbs.
Melt butter in a large pan, brown meat.
Add onions once rabbit is golden.
Cook for a few more minutes, then remove liver from heat.
Add ginger, cumin, cinnamon, saffron and crushed garlic, then stir in 300ml stock.
Season.

im sorry Miranda.. just for the record, I have never eaten a rabbit myself...but clearly there are some that do.

yeah, they were free werent they, so long as you could catch em..years ago my next door neighbour had 12 lovely rabbits that I used to go and groom and look after when I was a child, one day one went missing, then another..... when I asked my mom she said they had eaten them for dinner and I was traumatised.. so although Ive heard its very tasty, Ive never been able to eat one since.. anyway, must stop rabbiting on and get back to work.

Mmmm rabbit casserole...

Its funny how everything tastes like chicken unless it has hung for a while though.

Why are rabbits feet lucky? they obviously didn't help the rabbit that lost them.

The best polish dish is rumored to be " rabbit pate with auszpik (don't even ask me what that is ) covered with cranberry sauce". Unfortunately polish cuisine is still recovering from the times of communism, where people ate what was basically available. Still, I see things starting to improve.

Do they eat road kill there like they do in some parts of the US? That's when a car hits an animal and it dies on the road.

Canadian roadkill consists of: racoons, porcupines, moose, deer, black bear, Grizzly, cats, dogs, chipmonks. I haven't seen a rabbit yet.

Yep, roadkill can be anything. There are even roadkill cookbooks.
