Cook in Training

I am a Cook in training and I want to know more about my polish side and some of it's Cuisine, so I was wondering what recipes anyone would recommend?

something easy? mostly soups are pretty easy... like tomato or pickle or beet..
Generally they're all broth based so for example for a vegetable broth based soup (you can make any of those above listed with this) you would dump 2 1/2 cups of water into a pot, add 2 carrots, 2 parsnips, some celery, some dill or parsley, maybe half a turnip, a potato, and half an onion and then let that cook for like an hour semi covered. Take out those cooked vegetables and that's your broth. Then for ex. a tomato soup you would add tomato puree to the broth form 6 fresh tomatos and let it boil for a bit then add a little cream (mix the cream separately with some of the soup so it doesn't curdle) and some green stuff like a little chopped parsley or dill and that's your soup.
