What kind of flour is wiejska and what is the name for rye flour

I bought flour at our Polish deli and the label says Maka z kloskiem and at the bottom of the bag is says wiejska. When I googled wiejska it refers to polish kielbasa. What is this flour used for?

I really want a rye flour that I can make a sour dough starter with. What name would I find on the flour bag?

It's brand name and wiejska means countryside.
Most probably it's regular wheat flour. Look for numbers signifying the type. 450, 500 and 550 are the most common, all-purpose types, the lower the number the more purified the flour. 650-750 is bread flour and 900-2000 whole grain.

oh, and for the starter, look for m±ka żytnia chlebowa (type 750 - the same numbers apply). If you find m±ka żytnia 1800 or 2000, it's whole grain and it will not start easily, it takes a lot more time.

You can also make a wheat flour starter and use it for rye and mixed breads.

Buy "M±ka żytnia". I don't know what means m±ka z kłoskiem, it's probably weat - pszenna. Wiejska means village (it's nothing more than marketing name).

I used to bake bread at home. I might start doing it again, this time with spelt flour (orkisz). Great hobby!
