Traditionally-Polish salads, help needed

Hi,

I'm going to a meal at the weekend here in PL, where different people are making different courses. The starter will be several salads, and I'm doing one of them.

Can anyone suggest a good recipe? It's for 45 (yes, forty-five) people, and shouldn't need anything doing at the last minute.

I doesn't have to be traditionally Polish, but at least 30 of the people eating it will be Polish, and mostly over 50, so should fit well with Polish tastes.

I'd have done a herring salad, but somebody else is doing that.

Any and all suggestions are very welcome!

Maybe canned tuna, chopped onion and cellery, and mayo? Easy enough.

My boyfriend made me a lush Polish salad, he says is traditional in his family...

Raw chopped cabbage, red peppers (diced), cooked white rice, LOTS of black pepper, pickled cucumber/gherkin.....and some mayonaisse.
Might sound odd but was GORGEOUS. Black pepper v.important...

traditional polish salad..ehm salatka jarzynowa
-cooked carrot,root parsley,celery root,potatoes,eggs
-cucumber,leek,canned sweet corn ,majonez,salt ,pepper

hehe, hope it tastes as nice as I probably am making it out to be.
Does anyone have a recipe for a traditional Barscz (????) however its spelt. I'm fed up of the knorr packet mixes he has...

A note on the tuna salad:

Some people use canned corn instead of cellery, but I don't like it that way.

If prepared ahead of time it is good to cover with plastic wrap right on the salad so there is no air to discolor it (mayo).

The tuna available in PL is not the best but most Poles wouldn't know the difference between Albacore and Albatros(this is not a cut down, just a fact that they don't import good white tuna as it is more expensive).

The water needs draining by pressing the can's top against the fish.

Even if you don't make it for your event, it is always a nice, quick, light lunch with bread.

grate cabbage, carrots, apple, cucumber put mayo and lemon juice and also add little salt ^^ we use to eat it with breaded pork chop ^^

White rice, fine chopped gerkins, kidney beans, tinned peas, tinned sweetcorn, salt, pepper, mayo, yoghurt.

My gf makes this every party we have.

My gf's mum makes Barszcz by

Boiling the beetroots in a pan, peel them then grate them.

Add salt pepper and sugar to the red liquid.

I dont know how much salt, pepper and sugar, i think its just intuition to know how much :D

You have to like mayo---and I put it on almost everything---fries,sandwiches ,burgers etc.

Thanks for the advice. In the end, I made something like 1Jola's recipe, but with red and white beans and using red onion and finely sliced seler natrowy celery (as opposed to celeriac). I was worried I'd made too much (there were 4 salads as a starter for fortyfive people) but they loved it and ate the lot.

Bigger supermarkets have it, but it isn't popular - a bit of an exotic vegetable compared to celeriac.

I know it isn't. I'm surprised that they have it at all. Here in Canada it's hard to find what they call root celery (or celery rave in French).
