How do you make PLACEK Z KRUSZONKA?

Mum of my friend comes sometimes from Toronto for a visit and she always makes one special banana bread for me. Initially my hubbie was not a fan, as he is apprehensive about new stuff but now he likes it too so whole loaf is gone in two days.

I love that, although being somewhat traditional in my kitchen exploits I tend to do things they way there are supposed to be done. No canned garbage, all fruit natural, from local farmers. Long story short, a good szarlotka (with the shortcake) takes a couple of hours to make, and only minutes to disappear.

Banana bread is one of the easiest to make. About 1h25 minutes of which 1h10minutes is baking. You gotta try it one day.

We like this banana bread so much that we were considering give it a try. $500 for a Kitchen Aid mixer cooled us down bit as we had a lot of expenses recently. But it's gonna happened one day!

A $400 mixer will do the same job well :)
But seriously, the consistency of the mixture is so light that a $20 hand mixer might do. Just make sure the butter is very soft before mixing it in.

I never said that it was, only that it was similar to the picture of the cake that she posted.

many Polish blogs have nice recipies for this type of cake.

Yeast cake with fruit and kruszonka. Use google translate to translate this blog into English. there are quite a few Polish blogs with cake recipies.

search for "drozdzowe ciasto" and look for blog

KRUSZONKA (Polish crumb topping)
Cut 1/4 lb butter or marge into 1-1/2 c flour, 1/2 c sugar and 1/4 teaspon baking powder.
Work by hand into crumbly consistency and sprinkle over the top of your cake. Bake as directed.
