Simple recipe request.... Polish carrot salad

Good day,

OK....it's been over a year now since I was in Poland. While there, I had "salads" that consisted of a combination plate of shredded carrots, beets, etc.

I loved it! Especially the carrots...there seemed to some sort of seasoning/dressing with it, mild, but noticeable.

I've looked everywhere for a recipe for this and the other items on the "salad plate"...on line, books, etc....and can't find anything that replicates what I had in Poland.

Is it anything special? Maybe, it's just that everything was so fresh compared to what is served in the States.

It sounds to me like an ordinary salad. But of course, the freshness is essential.

Probably horseradish.
Shred the carrots and add a little horseradish with 1 teaspoon of mayo or sour cream. Add a pinch of salt and another one of sugar, mix well. Optionally you may add a squeeze of lemon juice.

Is that it?

There is a concoction of shreaded carrrots, shreaded apples and lemon juice...it might contain a handful of raisins on occasions. Would that be it? I just rediscovered it on my recent trip to Polandia few days ago and I'm making and eating radiculous amounts of it...mild addiction is a possibility...

The combo sounds pretty good (sans the raisins.)
A bit of pineapple juice could even give the recipe a little more kick.
