Hi,

My babcia used to make this vegetable dish with mainly eggplant and parsnip tomato, capsicum etc all shreded together in like a tomato (thin) sauce I used to call it sin - in - ki (no idea on sp?) its a tasty vegetable mix off all diff veges and I would love to recreate it but I am not sure what it was called "officially" - if anyone could help it would be much appreciated!!

Ingredients:

eggplant,
red capsicum,
couple small tomatos,
parsley (more common than parsnip in Poland),
hard cheese,
150g smoked chicken,
250g couscous,
1 tsp. thyme,
olive oil,
2 tsp. lemon juice,
salt, pepper

Cut and throw eggplant on the hot oil. Fry until browned. When our eggplant is ready, cut the other vegetables and throw.
Add the thyme then season to taste with salt and pepper.
Vegetables cook for about 15 minutes.

Couscous pours into a bowl and pour hot water, about 1 cm above the porridge. Let stand until couscous swells.

Cut chicken. When our vegetables and grits are ready, mix all ingredients. Add the lemon and fresh, chopped parsley. Mix.
If needed, you can season to taste with salt and pepper.
Finally sprinkle with grated cheese.
Done :)
