Do you detect a tendency amongst some younger Poles to translate cup of coffee as kubek kawy rather than filiżanka kawy?

Maybe because Poles usually drink coffee in mugs, not cups? On the other hand, if you say "let's grab a quick mug of coffee" in English, it doesn't exactly roll off the tongue, does it? ;-)

Kubek:
kubek
Filiżanka:
filizanka

Basically - filiżanka is seldom used these days.

I'd say from what I see people use "filiżanka" when they are having a bit more formal meeting with somebody or meeting an old friend or a bigger group of family memebers. Everywhere else there's a notion of using a mug, maybe it has to do with increased quantities of coffee being drunk at work.

Don't Polish cafés and restaurants still serve espresso and coffee in cups?

Of course they do, and nobody calls those cups "kubek" either. There is a formal setting and an informal one. You need to distinguish between them.

I only asked because someone said NO-ONE drinks coffee out of cups anymore (without adding: at home and at work) and someone showed a pic of a fancy china cup.
