An tłumacz-opiekun is an interpreter who helps and handles things for the person in his/her charge, a przewodnik-opiekun in addition to interpreting is also a tour guide. How would we translate those two concepts into good English?
In general opiekun can be a pain in the bum as it can be used to mean:
Someone caring for minors: guardian, fostrer parent
Someone caring for an invalid: carer, care-giver
At uni: tutor
Prof overseeing dissertation: adviser
Someoen maintainign order at teenage activities: chaperone
Nanny: baby-minder
In US schools: home-room teacher
Indeed opiekun is one of the most prolific Polish words. Know any other uses?

A lecturer overseeing a dissertation is a supervisor.

Caretaker would be more the crux of the matter.

In the US (maybe also Canada) the term major professor can also be used for someone overseeing a disseration. The main coruse of study is called a major and the secondary course - a minor. Someone can therefore have na przykład - a history major and Russian. minor. I reckon in some parts of the world saying 'she has a French major' might suggest she was dating frog brass.
