Could I gain Dual Polish Citizenship through my grandfather or grandmother, who were born in Poland and immigrated to America? If so, how could I do so? And also, if I had kids would they be able to gain citizenship through me?

For a reliable answer, I would contact your nearest Polish Consulate.

I found the email for the Chicago embassy, which is the closest to where I live, should I email them or what?

One thing you need to do is check when your family entered the U.S. There are 3 different citizenship acts that may apply. One is a 1920, 1951 and 1962 acts. Did your grandparents serve in the military after gaining citizenship or political office? Things like that may disqualify you. Best place to ask questions like that would be to look up the Poland forum on Easyexpat.
There are 3 parts under the polish citizenship and it would be worth the read before going to the consulate or embassy. Go to www.easyexpat.com, click on forums, scroll down forums: country and click on Poland. Then when you get there click on Immigration Poland - Polska. Then scroll down and click on Polish Citizenship Confirmation Pt 3. There is a pt 1 and pt 2 to that. Have fun reading. Hopefully what you find there may answer your questions before going to the consulate or embassy.
By the way, the Polish citizenship act has been a couple more times since 1962 and it would be worth following up on them as well to see how they apply as well.
