I have no degree at all.
So that's a problem, but I believe that a native English speaker, who can comunicate a little in Polish could find a job in a private language school even without degree.

I have heard a little about Rugby Union in Poland but nothing about Rugby League. And I am told there are no jobs in the field. I hope this is wrong.
If you are really qualified I bet that you could find this kind of job, but I see 2 problems:
1) money - a coach of a Polish national football team gets 60.000 EUR a month, but coaches in lower leages or in unpopular kinds of sport (and rugby is very "non mainstream" here) hardly get anything (and I mean really hardly anything), so often they just teach sport in school as the first job and coaching as the second or a hobby.
2) location - If your girlfriend wants to import you to Poland, she probably wants to live in some specific location and looks like there are only 2 rugby leages in Poland, each with 10 teams only (I checked on the union's website -
http://www.pzrugby.pl/ ), so It's possible that there's no club in the whole area or there's one, but It's not that they will immiedtly fire their current coach and take you.
If you are qualified also in other kinds of sport I would suggest something like fitness/aerobic. In bigger towns you may find such clubs for rich fat people, who want to lose a pieace of their fat asses and they should pay quite well there.
