Are they just synonyms, or are there contextual differences in meaning?

It's to order (zamawiać) vs to book (rezerwować). With the first, you're obliged to pay upon delivery, the latter requires confirmation before you buy.
zamawiać meble, pizzę, danie w restauracji
rezerwować bilet na samolot, pokój w hotelu, stolik w restauracji

See the restaurant context: rezerwować stolik, but zamawiać danie.
