How do I say "I love you my Gingerbread" in Polish

I call my GF my Gingerbread because of her lovely golden tan and since she is Polish and I am trying to learn it myself (coming from a very Polish family) I'd love to surprise her and say "I Love you my Gingerbread" Both spelling and proper pronunciation would be awesome!!! Thank you so much for any help!!!

Unfortunately, "piernik" (gingerbread) in Polish is an expression for someone rather old and seedy - even worse in the combination "stary piernik" (old gingerbread).
So I think you should come up with something different for your Polish compliments department... ;-)
Słońce (sunshine), serce (heart), kotku (kitten), rybko (little fish - yes, it IS a term of endearment!), kochanie (love), whatever, but please say NO to "pierniczku" (that would be the diminutive of piernik).
Have fun learning Polish :-D

Magdalena is right, calling your girlfriend piernik (gingerbread) might cause disastrous effects.
I think you might say czekoladko, little chocolate. Not only does it serve well to underline her beautiful tan, but also suggests she is sweet. Chocolate has very positive associations in Polish.
The whole text might look like that: Kocham Cię, moja czekoladko. I love you, my little chocolate.
Phonetic transcript: kohem tche moya tchekolatko.
