I call my GF my Gingerbread because of her lovely golden tan and since she is Polish and I am trying to learn it myself (coming from a very Polish family) I'd love to surprise her and say "I Love you my Gingerbread" Both spelling and proper pronunciation would be awesome!!! Magdalena is right, calling your girlfriend piernik (gingerbread) might cause disastrous effects.
I think you might say czekoladko, little chocolate. Not only does it serve well to underline her beautiful tan, but also suggests she is sweet. Chocolate has very positive associations in Polish.
The whole text might look like that: Kocham Cię, moja czekoladko. I love you, my little chocolate.
