SERNIK -- POLISH CHEESECAKE RECIPE

Grandma Krysia's homemade cheesecake

Preparation: 40 minutes
Wait time: About 1 hour
Bake time: About 1 hour
Difficulty: Hard

INGREDIENTS

CRUMBLY DOUGH

0.5 brick of margarine
0.5 cup of sugar
0.5 cup of flour
0.5 cup of potato flour
1 egg
0.5 baking powder

CHEESE FILLING

1 kg of cheese
4 potatoes (baked and grated)
2 cups of sugar
1 margarine
8 eggs (yolks)
1 tablespoon of potato flour
1 tablespoon of baking powder
1 vanilla sugar
Flavoring oils (extracts) for the cake: vanilla, orange, lemon
Dried nuts and fruits

Preparation

1. Crumbly dough: grate margarine and sugar together, add the remaining dough ingredients, and stir well. Butter the dough pan and sprinkle with bread crumbs. Spread the dough inside the pan.

2. Beat the remaining egg whites from the 8 eggs into a stiff foam.

3. Cheese filling: grate the margarine, adding the egg yolks, two spoons of cheese, and the potatoes one at a time. Add some sugar and grate well. Add the egg foam, potato flour, baking powder, vanilla sugar, and flavor oils (a few drops of each), stirring lightly. Add the dried nuts and fruits.

4. Pour the prepared filling over the dough.

5. Preheat the oven to 180 C, place the cake inside, and bake for about 1 hour.

Enjoy the Polish Cheesecake (Sernik)!! It's really delicious!

Good - I also like the so called sernik na cieplo (baked sernik) - my mother in law is good at preparing it smile

Hi, thanks a lot for the recipe, whoever tries it will love it - polish sernik is just the best.
I have a question though - why do you add baked and grated potato to the cheese filling? I've never seen something like that being done before.

I think it's to make sure the cake/cheese is "solid" and doesn't fall apart...

My Polish Mother-in law & sister in law used to make delicious cheese cake, the consistency of cottage cheese(crumbly) have never seen the lattice version before! 8 egg yolks!?
I actually was looking for the country of origin of the Cheesecake...England(cheesy pudding)? France(Neuschatel cheese)?

I am looking for a genuine Polish recipe for sernik or cheesecake like they make it in Poland. Cheesecake is very different here and even if you have a recipe from Poland from your great great grandmother and you make it in the States, it is probably different due to the different ingredients not being available etc. If anyone has a Polish - from Poland (not from a Polish cookbook written in the US) recipe - would you share it.

I'm looking for recipe for savory cabbage pierogi, my aunt used to make them when I was little. She died and I never had a chance to ask her how she made them. I can still taste them. The best ever
