So Jesteś taki a, ale i tak Cię kocham would be correct?

No, you got it wrong :)
-i/-a and -y/-a are alternative endings depending on the sex of the person you're talking to.
(to a female) Jesteś taka uparta, ale i tak Cię kocham.
(to a male) Jesteś taki uparty, ale i tak Cię kocham.

"Jeszcze" is not the best translation here, unless you want to sound as if your love was limited in time, it's like saying "I love you but it probably won't last long" ;)

That is what normally happens with love, especially when the woman in question is Polish!!

I'd say that's what normally happens with infatuation.

Polish women admit they are stubborn and headstrong. They have to be to get on in life. If those around u r stubborn and strong and u choose to be weak and indecisive, then live with the consequences
