Why and when would someone write "Ukochana" rather than "kochana" " Uspoko" rather than spoko etc etc ?

Low uneducated slang .... Uspoko/spoko = calm down, no problem.

Kochana = dear

Ukochana = beloved [This form carries a more emotional load ]

but there is no such a word as USPOKO. I've never heard about it

Please, understand it is low slang. I wouldn't expect you to have heard of it. I'm sure that you move in higher circles.

"Uspokoj sie" kinda gets shortened to just "uspoko". It is slang and always gets a laugh from my Polish friends when said with a Scottish accent !
